Position Overview


As Sous Chef, you will play a key role in supporting our Head & Executive Chef's to manage and lead the kitchen team. You will help deliver high-quality, innovative dishes that exceed our guests' expectations while maintaining consistency, excellence, and creativity. Key Responsibilities

 

  • Leadership & Kitchen Management: Work alongside the Head & Executive Chefs to manage kitchen operations, including menu development, food prep, cooking, and presentation.

  • Menu Innovation: Contribute to the creation of seasonal menus that reflect the diversity of tastes and preferences of our clientele.

  • Quality & Consistency: Ensure all dishes meet the highest standards of quality, taste, and presentation, adhering to food safety and hygiene regulations.

  • Stock & Inventory Control: Oversee inventory management, ordering, and stock control to ensure minimal waste and maximum cost efficiency.

  • Team Leadership: Mentor and guide kitchen staff, fostering a positive work culture that encourages teamwork, growth, and excellence.

  • Collaborative Approach: Work closely with the management team to help drive improvements to the dining experience, service quality, and business growth.

  • Kitchen Organisation: Maintain a clean, organised, and efficient kitchen while ensuring strict adherence to sanitation and safety standards.

  • High-Volume Service: Manage multiple dining settings, including our 120-seat restaurant and front bar, ensuring smooth operations during busy periods.

Qualifications

 

  • Experience: Proven experience in a high-volume, hospitality environment, preferably within a restaurant setting.

  • Role-Specific: Minimum of three years as a Sous Chef or Chef de Partie, looking to step up to a leadership role.

  • Culinary Education: Culinary degree or equivalent certification from a recognized institution.

  • Leadership Skills: Strong leadership and management abilities with a passion for mentoring and inspiring your team.

  • Creativity & Passion: A genuine passion for food, creativity in the kitchen, and a commitment to maintaining high standards.

  • Communication: Excellent communication and organisational skills with the ability to perform under pressure.

  • Knowledge: Deep understanding of food safety and hygiene regulations.

  • Flexibility: Willingness to work evenings, weekends, and public holidays as required.

  • Multitasking Ability: Experience managing multiple menus, including the restaurant, front bar, and snacks.

Chef De Partie

The George Bar & Dining is seeking talented and passionate individuals to join our kitchen team. We have two exciting opportunities for experienced Chef De Partie positions.

As a Chef De Partie, you will report directly to the Executive & Head Chefs and play a key role in the smooth running of the kitchen. You will work alongside a tight-knit and skilled team, contributing to all aspects of food preparation and service. Maintaining the highest standards of food quality, hygiene, preparation, and presentation will be essential to your success in this role.

We are currently seeking a talented and driven Head Chef to work alongside our executive chef in leading our culinary team and elevate our food offerings to even greater heights. Position Overview:

As Head Chef, you will report to our executive chef & be responsible for overseeing all aspects of kitchen operations, including menu creation, food preparation, cooking, and presentation. Key Responsibilities:

Lead and manage all aspects of kitchen operations, from menu planning and food preparation to cooking and presentation.
Create innovative, seasonally inspired menus that cater to a variety of tastes and dietary preferences.
Maintain consistency and excellence in food quality, taste, and presentation while adhering to food safety and hygiene standards.
Oversee inventory management, ordering, and stock control to minimize waste and maximise cost efficiency.
Train, mentor, and motivate kitchen staff, fostering a positive, team-focused work environment.
Collaborate with management to develop strategies that enhance the dining experience and drive revenue growth.
Ensure the kitchen is clean, organised, and operates efficiently, always maintaining the highest sanitation and safety standards.

Manage service for our 120-seat restaurant during multiple sittings, while also providing consistent meals for the front bar and snack menus.

Qualifications:

Proven experience as a Head Chef or Executive Chef in a high-volume, hospitality setting, preferably within a restaurant environment.
A minimum of three years’ experience as a Sous Chef, with a clear ambition to take the next step in your culinary career.
Culinary degree or equivalent certification from a recognised culinary institution.
Strong leadership, management, and organisational skills with the ability to inspire and motivate a team.
A passion for food, with creativity and a commitment to culinary excellence.
Excellent communication skills, with the ability to thrive under pressure and ensure smooth service.

Venue / Hotel Manager

The Lake George Hotel are seeking a motivated and enthusiastic Venue / Hotel Manager to join our staff on a full-time basis and lead our front of house team. Immediate start is available!

 

Duties & responsibilities:

  • Reporting directly to the Licensee and General Manager

  • Overseeing the daily operations of the pub, in house bottle-shop & hotel, ensuring smooth workflow of both front and back of house

  • Supervise, train, and direct staff to provide a great customer service experience & the right atmosphere within the venue

  • Work with licensee & senior management group to drive revenue, managing costs, ensure the compliance of WH&S regulations, etc.

  • Stock control & maintenance of alcoholic & soft beverages in line with operational requirements, management of cellar and beer lines

  • Ensure compliance with licencing and gaming laws & regulations, including completion and distribution of our monthly licencing checklist

  • Be responsible for the operation of gaming and wagering, including TAB & Keno on premises

  • Manage opening and or closing procedures

  • Handling of customer feedback and complaints where necessary

 

Experience & attributes:

  • Minimum of 1 year’ experience in a Venue / Hotel Manager role

  • Current NSW RSA and RCG certificates

  • TAB & AML certificates

  • Experience POS systems, stock control, rostering & people management

  • Background encompassing all areas of hotel operations

  • Solid understanding of financials, business expenses, labour costs, liquor gross profits, etc.

  • Availability & flexibility to work nights, weekends, public holidays as required

  • Excellent personal presentation and communication skills

  • Genuine passion for the industry, patrons & the people that work within it
